Buckeye Candy

Ingredients
3 C. creamy peanut butter
1 1/2 sticks softened butter
2 Lb's confectioners sugar
16 oz. semi-sweet chocolate chips or dipping chocolate
Procedure
Mix together the butter and peanut butter. Gradually add in the confectioners sugar until completely incorporated. Form the dough into small balls and put on a cookie sheet with waxed paper and then refrigerate for 1/2 hour to an hour. Melt chocolate in a microwave safe bowl for about 1 1/2 to 2 minutes, stirring every 30 seconds.
Stick a toothpick in the center of the peanut butter ball and dip into the chocolate just enough so that there is peanut butter showing through on top.
Refrigerate. Enjoy!
The candy will keep best in an air tight container in the refrigerator or the freezer.
